Hawaiian Coleslaw

This Hawaiian coleslaw made me think I was enjoying a nice lunch on a tropical beach. I loved the sweetness from the pineapple. The ‘pop’ of citrus from the mandarin oranges. And then there’s my favorite, maraschino cherries. Ok, maybe those aren’t so much tropical but they’re good! All in an easy-to-make creamy slaw (just make sure you dry the pineapple, oranges and cherries well!) that disappears in no time. This is one of my favorite coleslaws!

Take The Time

It’s important that you get the fruits dried well before adding them into this Hawaiian coleslaw. You don’t want a soggy, runny slaw. You want it creamy. Not soupy. And you definitely don’t want the cherries to ‘run’ into the slaw. That might taste great, but it’s not going to ‘wow’ anyone at first glance. So take the extra few minutes and dry them well. You’ll be rewarded for your efforts!

  • Combine the coleslaw mix and the mayonnaise in a large bowl.
  • Gently fold in the pineapple, oranges and the cherries.
  • Season with salt and pepper to taste and stir.
  • Refrigerate for 3-4 hours before serving.

Notes

Stir again before serving.
You want the pineapples, oranges and cherries well-drained before adding them to the coleslaw mix. You don’t want the extra liquid in the salad, and you definitely don’t want the cherries to discolor it.

Diner-Style Coleslaw

I do love a cold, creamy coleslaw. Nothing fancy. And maybe a little vinegary kick. But not much. This diner-style coleslaw is my kind of slaw. Perfect on a hot day, for lunch or dinner. Perfect on a cool day too. And crazy easy to make. This slaw reminds me of the ones you’d find in the glass cases in the diners of old. The ones with the sliding doors. Made early that morning, wrapped in plastic wrap, and chilled to perfection!

Nice And Creamy

I use Blue Plate mayonnaise in all of my slaws. For me, it’s the best-tasting, creamiest mayonnaise around. You can use your favorite. Even though this diner-style coleslaw isn’t complicated, better ingredients make for a better slaw.

I didn’t have white balsamic vinegar on hand. I knew I didn’t want to use regular ole balsamic vinegar. Though it’d add the same flavor, it’d discolor the slaw. That wouldn’t be good. I used apple cider vinegar instead and the slaw come out fantastic. Problem solved!

  • In a large bowl mix together everything except for the slaw mix.
  • Add the slaw mix and stir to coat.
  • Sprinkle with the parsley (if using) and stir.

Notes

Stir again before serving. Store leftovers in the fridge.
You can substitute two small heads of cabbage and 2 carrots, all shredded, for the bagged slaw instead.

Arkansas Coleslaw

At first glance, this Arkansas coleslaw may seem like your standard slaw. You know. Cabbage. Carrots. Dressing. But, it’s the addition of apple and celery that really make it different. It’s super crunchy, and I love a crunchy slaw. It holds up for days, making it perfect for a quick lunch side, a picnic, or a family get-together. This is a favorite in our house and for good reason.

Make Your Own Coleslaw Mix. Or Don’t.

I use pre-packaged slaw mix almost every time I make a slaw at home because it’s easy of course. I could get some cabbage, some carrots and whatever else and shred and chop them myself. But I usually have good luck with the bagged stuff so that’s what I use. I used it to make this Arkansas coleslaw, but fresh made can also be used. My only recommendation on the pre-made stuff is to not just blindly dump the contents of the bag into a bowl. Sift through it and make sure there’s not anything ‘wonky’ in it. Like big chunks of cabbage core. Or huge carrot pieces. You do have to watch for that stuff!

I’m a huge fan of celery salt. This recipe has just right amount of that celery greatness. Both from the celery salt and from fresh celery. It’s yummy!

For the coleslaw

  • 12 ounce coleslaw mix, with carrots
  • 1 small sweet onion sliced thin or chopped
  • 1 red delicious apple peeled, cored and diced
  • 2 ribs celery chopped

Instructions
 

  • Whisk together all of the dressing ingredients in a large bowl.
  • Add the coleslaw ingredients and stir gently to combine.
  • Refrigerate until ready to use.

Notes

You can use a light mayonnaise, but you’ll have a thinner dressing.
Give the salad a good stir before serving.
