Last week was salad week here. That means fresh greens, lots of different vegetables and some fruits, sliced grilled chicken, and of course, homemade salad dressings. This copycat Olive Garden salad dressing has a nice rich cheese flavor. There’s a little sweetness and just a hint of citrus. It’s a well-balanced dressing, and even though it has vinegar too, it is tamed down a bit by the mayonnaise. I’m not a big fan of overly-vinegary anything, specially dressings. This one doesn’t scare me off, not one bit. That’s a good thing, of course!
Thicker or Thinner It’s Up to You
I recommend starting with less vinegar if you want a thicker dressing. Begin with a tablespoon and add more if you like. I kept this copycat Olive Garden salad dressing in some little glass jars that I picked up in the kitchen section of our local grocery store. They seal air-tight, making them the perfect containers for salad dressings. You could just as easily use Mason jars. Mason jars are always great for making and storing dressings.
Of course you can transfer the dressing to fancier containers, such as cruets, for serving if you wish.

Copycat Olive Garden Salad Dressing
Ingredients
- ½ cup mayonnaise
- ⅓ cup white vinegar
- 1 teaspoon vegetable oil
- 2 tablespoons corn syrup you can substitute honey
- 2 tablespoons Parmesan cheese grated
- 2 tablespoons Romano cheese grated
- ¼ teaspoon garlic salt
- ½ teaspoon Italian seasoning
- ½ teaspoon dried parsley
- 1 tablespoon lemon juice
- sugar to taste, optional
Instructions
- Place all ingredients into a blender and process until smooth.
- Refrigerate for 30 minutes before serving.
