Lexington Coleslaw

Someone asked me the other day if I’d ever had ketchup in a coleslaw. I gave them the same look you’re making right now. No way. Nope. Never. That’s nuts. Then along came this Lexington coleslaw. It contains ketchup. Yep. And you know what? It’s crazy good! What a tangy, delicious twist it brings to a slaw. This is totally different and totally great!

Ketchup actually adds a lot to this slaw. I won’t say that this Lexington coleslaw is quite your ‘standard’ slaw without it. It’s decent enough. But the ketchup, that tomato flavor, is perfect. The chili powder is different, too. With a nice vinegar hit, it’s not a creamy slaw. It’s more in-your-face. And it has a little kick too that kinda sneaks up on you. This is a great slaw. It’s wonderful as a side, but really great heaped on top of grilled hot dogs or a pulled pork sandwich!

Instructions
 

  • Place slaw mix in a large bowl.
  • Place vinegar and sugar in a medium saucepan over medium-high heat and stir until the sugar is dissolved.
  • Add the remaining ingredients to the saucepan and stir.
  • Bring to a boil then reduce heat to a simmer and let simmer for 10 minutes.
  • Remove from heat and let cool for 15 minutes.
  • Pour the dressing over the coleslaw mix and stir to coat.
  • Serve warm.

Notes

Stir again before serving. 
Store leftovers in the fridge and serve cold.
