If you’re thinking this isn’t complicated, you’re right. It’s not complicated. Simple ingredients. Short preparation time. But good, fresh results. Sometimes I get a mental block as to what I want in my salads. I found that the easiest way to get around my block is to make subs in a tub. Easy salads made using my favorite sub sandwich toppings. Today I made a Subway roast beef sub in a tub. No rocket science involved here. Only minutes spent preparing. And in the end, a good salad!

A Little Prep And A Lot Of Happiness

I usually have what I call ‘salad weeks’ here. Yep, an entire week of salads for lunch or dinner. I go to the store and I load up on fresh ingredients, then prepare them all at once. Or most of them at least. The items that hold up well are prepared ahead of time as much as possible. Then I can make my Subway roast beef sub in a tub in no time at all. I just add a few more ingredients, grab my favorite dressing, and it’s time to eat.

  • Place the lettuce into your tub or onto a plate.
  • Layer the sandwich meat slices and roll up like a cigar. Slice with a knife. Add to the lettuce.
  • Slice the cheese and add to the lettuce along with the tomato and onion.
  • Sprinkle with salt and pepper to taste.
  • Serve with your favorite dressing.

Notes

This salad can be made a day ahead. Just cover and store in the fridge.
