I’m not that fancy or complicated. And usually, neither are my lunches. That’s not to say that I don’t enjoy them, though. I coulda gotten dressed (I work from home) and grabbed a sub for lunch. Or have it delivered I guess. But I wasn’t in the mood and I’m cheap. So I made a Penn Station Ham and Swiss sub in a tub instead! And boy was it a mighty delicious salad! Fresh ingredients, ready in no time. And heck, I even felt better after eating it!

I chop the lettuce and tomatoes the day before. On the day of lunch I just cut up some meat and cheese, add a little salt and pepper and I’m ready! Oh yeah! Dressing! For the dressing I just grab whatever suits my fancy! This isn’t complicated. Just a nice lunch. Oh and I can add bread if I want to…. as croutons!

It doesn’t take some big fancy fru-fru lunch salad to make me happy. In fact, I’m more than happy making copycats of my favorite sub chain sandwiches as salads. Today I made a Jersey Mike’s ham and provolone sub in a tub. I kept it simple. But that doesn’t mean I skimped on flavor and fun. And I didn’t skimp on the meat and cheese, either. Hey, just because it’s a salad doesn’t mean that I can’t load it up a bit. I don’t want to be hungry 5 minutes after lunch, ya know!

Eating Out Of A Tub Is Fun

I don’t know why I love eating my Jersey Mike’s ham and provolone sub in a tub out of a tub so much. Heck, I was eating at home. I have salad bowls and plates. Too many of them in fact. But there’s something about eating out of a tub. One thing I’ve noticed is that the salad and dressing seem to mix better. Easier. Nothing is flying off my plate as I stir, getting that dressing on every salad ingredient.

Prep Ahead For Easy Salads

I spend a few minutes a few times a week preparing the ingredients I need for my subs in a tub. In one container I place a mix of lettuces, chopped to bite-sized pieces. In another, chopped Roma tomato. Why Roma? I’ve found them to be tastier and easier to chop. And cheaper. I just make sure that they are good and ripe. Last, I have a container for chopped onion. I cut the sandwich meat and cheese when I make the salads, though I could easily prepare them ahead of time too.

Blimpie’s Ham and Swiss Sub In A Tub

Sadly all of the Blimpie restaurants near me closed. I used to love going there for lunch when I worked in an office. The ingredients were always fresh and they had (at the time) the best sub bread. Well now I eat less bread but still enjoy the same sandwich flavors by making my favorites at home. Like this Blimpie’s ham and Swiss sub in a tub. Nothing fancy here, just a good quick salad with plenty of tasty ham and delicious cheese.

It’s Easy. Super Easy.

Making a Blimpie’s ham and Swiss sub in a tub is really easy. That’s part of the allure, I think. And I so love the end results. I use a combination of iceberg and green leaf lettuces. I chop them into bite-sized pieces but you could tear them instead. All that’s left to do is slice a few sandwich meats and some cheese. A little chopped tomato and onion and I’m ready to eat.

The Finishing Touches

Oops! Not quite ready to eat yet! I always add a bit of salt and pepper. Well, I have an asterisk to that. If the sandwich meats I use are high in sodium, and they often are, I will skip the salt. But I never skip the pepper. When I eat salads out at restaurants I always reach for the pepper.

All I need is my favorite dressing and I’m good to go!

I chop a combination of iceberg and green leaf lettuces and put them in a sealable tub with a paper towel to help keep them fresh. I use cherry or Roma tomatoes because they hold up well. So, I chop them too and place them into the fridge.

I could pre-cut my sandwich meats and cheese, but I like doing those the day I am having my salad. Who knows, I might change my mind from the day before about what I want on my salad.

It’s sub in a tub week here again! Woo hoo! It’s one of my favorite weeks. Every once in a while I go on a salad-for-lunch kick. Or, for dinner. No big ole subs for me. Just nice, fresh, loaded salads. Now, this ain’t necessarily one of them fancy light, healthy salads. A guy has gotta eat. Work is hard. I work up an appetite. Subway Club Sub In A Tub

I love having a salad for lunch. Not a same-ole same-ole salad, either. I am hooked on making salad versions of popular sub sandwiches. Like this Subway Club sub in a tub. Nothing boring about this. A pretty-much-standard but-oh-so-yummy salad is topped with sandwich meat and fresh veggies. The original sub doesn’t come with bacon. I club sandwich without bacon??? Yeah, that’s what I thought too. So I added bacon.
