Ah, lunch time! No lunch humdrums here! Before work this morning I prepped my Subway Supreme Meats sub in a tub. In no time I had a delicious dish ready to roll. And no skimping on toppings, either. I can put as much or as a little as I want. Hey, it’s my tub after all!

A Little Prep Goes A Long Way

I usually have ‘salad weeks’. Yep, an entire week of salads. To make things go smoothly, I do as much preparing ahead of time as I can. That way when it comes time to make my lunch, such as this Subway Supreme Meats sub in a tub, I can have it put together in just minutes. I chop a combination of iceberg and green leaf lettuces and put them in a sealable tub with a paper towel to help keep them fresh. Onion is chopped and placed in a resealable container. I use Roma tomatoes because they hold up well. So, I chop them too and place them into the fridge.

I could pre-cut my sandwich meats and cheese, but I like doing those the day I am having my salad. Who knows, I might change my mind from the day before about what I want on my salad. So I just wait. It’s not like they take that long to cut!

I choose my dressing last minute. If I pick it too early I might second guess myself.

Finally, I get to enjoy a wonderfully fresh loaded salad for lunch!

  • 2 cups lettuce chopped. I use a mix of green leaf and iceberg
  • 1 slice ham sandwich meat
  • 1 slice salami sandwich meat
  • 1 slice capicola sandwich meat
  • 1 slice pepperoni sandwich meat if using the smaller pizza-sized pepperoni use 4 slices
  • 1 slice provolone cheese
  • 1/2 small tomato chopped
  • 1 tablespoon onion chopped
  • Kosher salt to taste
  • freshly ground black pepper to taste
  • Your favorite salad dressing

Instructions
 

  • Place the lettuce into your tub or onto a plate.
  • Layer the sandwich meat slices and roll up like a cigar. Slice with a knife. Add to the lettuce. Note: If your meats are too thick to roll up, just slice them into bite-sized pieces instead.
  • Chop the pepperoni into bite-sized pieces. If using smaller pepperoni slices, just quarter them.
  • Slice the cheese and add to the lettuce along with the tomato and onion.
  • Sprinkle with salt and pepper to taste.
  • Serve with your favorite dressing.

It doesn’t take some big fancy fru-fru lunch salad to make me happy. In fact, I’m more than happy making copycats of my favorite sub chain sandwiches as salads. Today I made a Jersey Mike’s ham and provolone sub in a tub. I kept it simple. But that doesn’t mean I skimped on flavor and fun. And I didn’t skimp on the meat and cheese, either. Eating Out Of A Tub Is Fun

I don’t know why I love eating my Jersey Mike’s ham and provolone sub in a tub out of a tub so much. Heck, I was eating at home. I have salad bowls and plates. Too many of them in fact. But there’s something about eating out of a tub. One thing I’ve noticed is that the salad and dressing seem to mix better. Easier. Nothing is flying off my plate as I stir, getting that dressing on every salad ingredient.

Prep Ahead For Easy Salads

I spend a few minutes a few times a week preparing the ingredients I need for my subs in a tub. In one container I place a mix of lettuces, chopped to bite-sized pieces. In another, chopped Roma tomato. Why Roma? I’ve found them to be tastier and easier to chop. And cheaper. I just make sure that they are good and ripe. Last, I have a container for chopped onion. I cut the sandwich meat and cheese when I make the salads, though I could easily prepare them ahead of time too.

It goes without saying that I do like a lot of meat on my salads. That’s probably why I eat them as often as I do. And sometimes, I admit, I go a bit far with it. I might have when I made this Subway cold cut combo sub in a tub. But I couldn’t help myself. Ham (a weakness). Salami (my other weakness). Bologna (another weakness). Provolone cheese. Making a Subway cold cut combo sub in a tub is really easy. And I so love the end results. I use a combination of iceberg and green leaf lettuces. I chop them into bite-sized pieces but you could tear them instead. All that’s left to do is slice a few sandwich meats and some cheese. A little chopped tomato and onion and I’m ready to eat.

The Finishing Touches

Oops! Not quite ready to eat yet! I always add a bit of salt and pepper. Well, I have an asterisk to that. If the sandwich meats I use are high in sodium, and they often are, I will skip the salt. But I never skip the pepper.

All I need is my favorite dressing and I’m good to go!
