Sure, I love a good oil-and-vinegar dressing. I’ve got a big list of the ones I make regularly. But sometimes, they can be a little strong. This red pimento salad dressing is nice and smooth, yet still classic in taste. It’s a little sweet. And it has a little twist with the subtle flavor of sweet and mild pimentos. Easy to make, this is a great dressing for any salad.

I found the recipe for this delicious red pimento salad dressing in my copy of the Homemade Salad Dressing and Vinaigrette Cookbook. It is packed with tons of great recipes like this one. I mean tons. It’s a great cookbook to have on hand.
The recipe below makes about 2/3 cup of dressing. In theory, that’d be 2 servings. I liked it so much that I’d call it more about 1.1 servings. I’d make more. There’s nothing worse than not having enough dressing.

Red Pimento Salad Dressing
Equipment
Ingredients
- 3 tablespoons olive oil
- 3 tablespoons red wine vinegar
- 2 tablespoons pimentos finely diced
- 1 teaspoon sugar
- 1 /4 teaspoon kosher salt
- 1 /4 teaspoon freshly ground black pepper
Instructions
- Place all ingredients into a small bowl and whisk until well-combined.
- Alternatively, place all of the ingredients into a jar. Screw a lid on tight and shake until all of the ingredients are combined.
- Cover and refrigerate any leftovers.
