Hawaiian Coleslaw

This Hawaiian coleslaw made me think I was enjoying a nice lunch on a tropical beach. I loved the sweetness from the pineapple. The ‘pop’ of citrus from the mandarin oranges. And then there’s my favorite, maraschino cherries. Ok, maybe those aren’t so much tropical but they’re good! All in an easy-to-make creamy slaw (just make sure you dry the pineapple, oranges and cherries well!) that disappears in no time. This is one of my favorite coleslaws!

Hawaiian Coleslaw

Take The Time

It’s important that you get the fruits dried well before adding them into this Hawaiian coleslaw. You don’t want a soggy, runny slaw. You want it creamy. Not soupy. And you definitely don’t want the cherries to ‘run’ into the slaw. That might taste great, but it’s not going to ‘wow’ anyone at first glance. So take the extra few minutes and dry them well. You’ll be rewarded for your efforts!

Also try some Carolina coleslaw!

Instructions

  • Combine the coleslaw mix and the mayonnaise in a large bowl.
  • Gently fold in the pineapple, oranges and the cherries.
  • Season with salt and pepper to taste and stir.
  • Refrigerate for 3-4 hours before serving.

Notes

Stir again before serving.
You want the pineapples, oranges and cherries well-drained before adding them to the coleslaw mix. You don’t want the extra liquid in the salad, and you definitely don’t want the cherries to discolor it.

Subway Rotisserie-Style Chicken Sub In A Tub

Used to be, ham and bologna were about the only sandwich meats I knew of. That was long ago. Now, rotisserie-style chicken is a favorite. Where was it when I was a kid? Then, it was sandwiches. Now, it’s more salads. Salads like this Subway rotisserie-style chicken sub. That great rotisserie chicken flavor on an easy-to-make salad. Only minutes spent preparing, for minutes of happiness!

Subway Rotisserie-Style Chicken Sub In A Tub

I Look Forward To Salad Week

I usually have what I call ‘salad week’ here. An entire week of salads for lunch or dinner. I go to the grocery store and I grab fresh ingredients, then prepare them all at once. Or most of them. The items that hold up well are prepared ahead of time. The rest I do the day-of. That way, I can make my Subway rotisserie-style chicken sub in a tub in no time at all the next day. I just grab my favorite dressing, and it’s time to eat.

Blue Cheese Thousand Island Salad Dressing

This is salad dressing elevated. More flavors than I can even describe in each and every bite. This blue cheese thousand island salad dressing quickly became the star of our dinner side salads this week. Hints of traditional flavors but with wonderful bell peppers and blue cheese (and a few other things). This is a crazy-good dressing that I’d make again and again.

Blue Cheese Thousand Island Salad Dressing

Squeeeeeeeze

There is a little trick to making this blue cheese thousand island salad dressing. If you’re not careful, it’ll end up a bit runny and thin. Now, the flavor will still be there so don’t panic if yours is a bit on the thin side. You can prevent it by making sure that the ingredients are as dry as possible before you add them. The ones that aren’t liquid to begin with, that is. It’s kind of hard to pat sour cream dry… Anyways, just make sure the onion for sure is squeezed well to get the moisture out. The peppers and relish, well, just give them a quick dab with a paper towel.

Oh and don’t use anything ‘light’ in this. Light usually means thin and we don’t want thin here.

Down Home Buttermilk Salad Dressing

Me and any salad dressing containing buttermilk are friends. For me, it makes for the perfect basis for a good dressing. This down home buttermilk salad dressing isn’t complicated. There’s really not much in it. It lets that wonderful buttermilk flavor come through, without burying it. This dressing is thinner, but not crazy thin. So it’s also great for dipping veggies. And oh, of course, wings!

Down Home Buttermilk Salad Dressing

Leave It Alone

This down home buttermilk salad dressing needs some alone time in the fridge before you serve it. Just cover it and let it go. Six hours at least. Overnight is better. It’ll thicken up slightly (but not much). And the flavors will meld. Give it a stir and you’re ready to go! It’s just that simple.

Jimmy John’s Bootlegger Club Sub In A Tub

Sure, me and some co-workers coulda gone out for subs for lunch. But I wasn’t in the mood for all that bread. And I’m cheap. On top of that, I don’t have any co-workers. Well, I do but I work from home. I’m not going out to grab a sandwich. So I made a Jimmy John’s Bootlegger Club sub in a tub instead! And boy was it a mighty delicious salad! I enjoyed the fresh ingredients. And I really enjoyed that it was ready in no time at all. I even felt better after eating it!

Easy Asian Coleslaw

I wanted a good, lighter side dish for my Asian-inspired dinner. Something easy but still delicious. Something that can sit proudly alongside my orange chicken without playing second fiddle. This easy Asian coleslaw was a real winner. Crunchy. Just the right amount of sesame oil. And tons of good fresh stuff.

Easy Asian Coleslaw

Come On, Get Happy

You can serve this easy Asian coleslaw as soon as you add the dressing to it and give it a toss. It’s great right then and there. But it’s also great after sitting in the fridge overnight. I rather prefer it that way as the cabbage and onion soak up that delicious dressing.

I’ve made this coleslaw several times. The crunchy texture and wonderful dressing are a real winner. It’s not only great served as a side dish, but also on top of pulled pork sandwiches!

Spicy Firecracker Coleslaw

I am a huge fish-and-chips fan. So when we recently ate at the Aquarium Restaurant in the Opry Mills shopping center in Nashville, Tennessee, that’s what I ordered. And of course I had it with slaw on the side. But not any ordinary slaw. This one had some kick. A spicy kick. And the dressing was different. Deeper. Tastier. After a few tastes it occurred to me that it was a balsamic vinaigrette. “Perfect!” I thought. And as soon as we got home, I made an almost-copycat just-as-great spicy firecracker slaw! Same great kick, same great vinaigrette!

Spicy Firecracker Coleslaw

A Slaw With A Spicy Kick

My version of spicy firecracker slaw is very close to the one we had at the Aquarium Restaurant. I think theirs was made with a white balsamic vinegar, which I didn’t have. I had to substitute dark, which of course made my slaw darker. I also added a spicy mustard, which I’m not sure the original contained. I think so, so I added it. Either way, theirs is great. And mine is great. So no one is wrong!

Also try my tangy coleslaw.

Tangy French Salad Dressing

My wife and I both made the ‘wow’ face when we first tried this tangy French salad dressing. This is our kind of good stuff. Nice and creamy. Fantastic flavor with a hint of vinegar and a little sweetness. The perfect balance. This dressing made our good salads great!

Tangy French Salad Dressing

A Lot Of Dressing

This recipe for a tangy French salad dressing makes quite a few servings. Don’t let that scare you. You don’t have to use it just for salads. We didn’t. It’s great just for dunking vegetables. Carrot sticks, cherry tomatoes, radishes… all of them are better after spending a little time in this dressing. But the real winner? Using the dressing on a sandwich. Skip your usual mayo or whatever you use and try this instead. It’s fantastic on sandwiches!
