Sure, I coulda got a sub for lunch. But I wasn’t in the mood for all that bread. Plus I’m all about making my lunch at home. I work here. I’m not going out to grab a sandwich. So I made a Subway All-American Club sub in a tub! And boy was it a mighty delicious salad! All my favorite things on a super-easy-to-make lunch-sized salad!

The No-Bread Zone

Everything is here on my Subway All-American club sub in a tub that can be found on the store-made sandwich. I chop the lettuce and tomatoes the day before. And I bake a package of bacon the day ahead, keeping the crispy pieces in the freezer for moments and dishes like this. Twenty seconds in the microwave any they’re nice and toasty yumm!

So the day of lunch I just cut up some meat and cheese, add a little salt and pepper and I’m ready! Oh yeah! Dressing! For the dressing I just grab whatever suits my fancy!

  • Layer the sandwich meat slices and roll up like a cigar. Slice with a knife. Add to the lettuce. Note: If your meats are too thick to roll up, just slice them into bite-sized pieces instead.
  • Crumble or chop the bacon and sprinkle over the salad.
  • Slice the cheese and add to the lettuce along with the tomato and onion.
  • Sprinkle with salt and pepper to taste.
  • Serve with your favorite dressing.

Kinda garlicky but not too much so. Wait… anchovy paste? Yes. If you fear the anchovy, don’t. Embrace it. It’s not overpowering, not even. But this dressing needs it. And you need it.

A Little Control.

Need help with self-control around great salad dressings? I do. A lot. So I use these little sauce cups. The idea is that I put all the dressing I need (not necessarily want) into the cup and put that on my plate. I leave the bottle or container of the rest of the dressing in the kitchen. Far away. Out of sight. Not out of mind, but far away that I might resist going and getting more. That’s touch to do around great dressings like this one.

Jersey Mike’s Club Supreme Sub In A Tub

I love having a sub in a tub for lunch. They’re super easy to make. They taste just like their sandwich big brothers, but without the bread. Today I made a Jersey Mike’s Club Supreme sub in a tub. I start with a few handfuls of fresh-chopped lettuce. I like a combination of about half iceberg and half green leaf lettuce. Then I add some sliced sandwich meats. In this case, turkey and roast beef. I then grab a few pieces of cooked bacon out of the freezer, microwave it for about 15 seconds, and chop. Next, a little chopped Swiss, tomato and onion. And I never forget some salt and pepper. No salad is complete without it!

The Perfect Lunch In A Tub

I use whatever dressing I have on hand to top my Jersey Mike’s Club Supreme sub in a tub. I drizzle a bit over the top then stir it up. One nice thing about making these salads in a tub is that I don’t have to worry about getting all of it coated in my dressing. It’s easy to stir inside the tub.

Cleanup is easy too. Just toss the container into the dishwasher!

Prepare Ahead

The day I make these I just grab containers out of the fridge. The lettuce, tomatoes and onions are already chopped for me. Each in its own container. I spend a little time two days a week getting everything together. After that, it’s just pretty much just ‘everyone into the tub’! For the sandwich meats, I like to stack the meats and then roll them up like a cigar. A quick slice and boom! Cool little meat rolls!

I prefer to bake my bacon. I then freeze it. It’s perfect for topping my salads! It’s ready in seconds, just wrap in a paper towel and microwave for 15 seconds.

Copycat Kraft Catalina Salad Dressing

I’ve made my share of copycat recipes. Some come out great, tasting and even looking like the original. Some… meh. Well this copycat Kraft Catalina salad dressing is even better than the original. That same fantastic French dressing-like flavor. A little tangy. A little sweet. And just the perfect consistency for a salad. For me, it’s spot-on what I am looking for in any dressing, be it a copycat or not.

There Goes The Self-Control. Again.

I have to exercise self-control around this copycat Kraft Catalina salad dressing. Or try to at least. I’m pretty heavy-handed with my dressing, specially if it’s one I love as much as this one. Instead of serving it in a bottle or cruet, I use some small sauce cups. The theory is that I put one serving of dressing into a cup and put that on my plate. That’s the theory anyways.

Perfect For Dunking, Too

I’ve been known to dunk my salad ingredients in my dressing. These little cups (that were supposed to be for portion control) make that even easier. Just poke that little piece of broccoli or cherry tomato or whatever, and into the dressing pool we go! This dressing is so good that dunking is not only allowed, it’s encouraged!

Creamy Italian Salad Dressing

This creamy Italian salad dressing really hit the spot for me. It has a good dose of garlic. There’s a bit of the nuttiness from Parmesan. And just the right amount of Italian seasoning. I’m a big fan of creamy dressings. They are my weakness, for sure. I put a lot more on my salad than I should, I’m sure.

Thin or Thick, It’s Your Call

The original recipe for this creamy Italian salad dressing stated to just up and add 2 tablespoons of water to the mix before you blend it. I found that the dressing was too thin when I did this. I recommend that you blend the dressing without any water first. If you find it to be too thick, add a bit of water (maybe half a tablespoon at a time) and blend again. The dressing will get a bit thicker as it rests in the fridge, but not a lot thicker. You can’t take the water back out, so I would be light with it.

On the off-chance that you do make the dressing too thin by adding too much water, you can add a bit more mayonnaise and blend again. This will help thicken it up some.

  • Check the dressing for consistency. If you like it thicker you're probably done, but if you like it thinner, add a bit of water and process again. Repeat until you get it just like you like it. The dressing will get a little thicker as it sets.
  • Refrigerate until ready to serve, at least 12 hours.
  • Stir before serving.

This creamy blue cheese salad dressing is easily my favorite blue cheese dressing. It’s so nice and creamy. And although it’s definitely ‘blue cheesy’ it’s not so overwhelming. You know the old saying, “Don’t judge a book by its cover”? Well, that’s what I first thought after making this copycat Outback Steakhouse blue cheese vinaigrette. Copycat Ruby Tuesday Pumpernickel Croutons

Sadly, the Ruby Tuesday’s that was near our home is long gone. Oh, how I do miss their salad bar. It was always well-stocked and super-cold. It was a happy time when I walked up with my plate and started to craft my salad creation. One of my favorite things on the bar, and the crowning piece for my salads, were the croutons. Perfectly crunchy on the outside, tender on the inside, I would mound them up on my plate. True. Well, now I have to make my copycat Ruby Tuesday pumpernickel croutons instead. In addition, I love them just as much!

Tasty Memories

I’m pretty sure the croutons at Ruby Tuesday weren’t baked. I think that’s ok. However, and more importantly, these taste like the croutons I remember. And that was my goal of these copycat Ruby Tuesday pumpernickel croutons: to reproduce that memory.

I could only find a lighter pumpernickel the day I made these. The ‘real’ ones used a darker bread. Either way, you’ll love them.

  • 4 cups pumpernickel bread cut into 1/2″ cubes
  • 4 tablespoons unsalted butter melted
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt plus a bit more

Instructions
 

  • Preheat oven to 375 F.
  • Place breadcrumbs into a large bowl.
  • Place butter into a small bowl. Stir in the garlic powder and salt.
  • Pour butter mixture over breadcrumbs and toss or stir gently to coat.
  • Pour bread out onto a large baking sheet. Spread out evenly.
  • Bake for 10 minutes and check for crispiness. Bake longer if needed, but check every few minutes or so. The croutons will get crunchier as they cool so take them out before they are totally crunchy.
  • Remove. Sprinkle with salt if desired.
  • Let cool before serving.

Notes

Thick-cut pumpernickel makes for the best croutons.
