Copycat Hard Rock Cafe Coleslaw

The last Hard Rock Cafe we visited, in the Mall of America, is long gone. That is too bad since we loved the cool music-themed items. And the food. But hey, at least we can make a copycat Hard Rock Cafe coleslaw at home now. This is a big favorite in our house. It’s easy to make. Like crazy easy. And delicious. Creamy. A little sweet. Crunchy. It’s my kind of coleslaw.

Copycat Hard Rock Cafe Coleslaw

Good Things Take Time

As easy as this copycat Hard Rock Cafe coleslaw is to make, it cannot be rushed. It needs some quality time in the fridge for the flavors to get perfect. And they will. Sure, you can give it a taste or two moments after making it, and you’ll like it. But to love it, give it that overnight ‘soak’. Or more. Up to two days for maximum coleslaw love. It’s worth it.

Hard Eight BBQ Coleslaw

There are a lot of Texas BBQ joints on my bucket list. Hard Eight BBQ is one of them. I’d get there the minute they opened and stay until they closed that day. And it’d be one of the best days of my life. And guess what? I’d even eat their coleslaw while I’m there. Besides, man doesn’t live on brisket and smoked sauce alone, does he?

Hard Eight Coleslaw

Oh, The Dressing!

This Hard Eight coleslaw is vinegar-based. Not that creamy stuff you might be used to. And it’s a bit sweet, too. And as much as it’s great on the side, let me tell you, it’s amazing on anything grilled. I grilled up some chicken thighs, slapped them on some buns, and pilled on the slaw. And nothing else. The slaw was fantastic. I didn’t need anything else. The crunchy, the heat… just perfect. Next time you’re making a sandwich, burger or whatever, and you’re thinking you need maybe a little lettuce on it, stop. Make this slaw and use it instead. You’ll be more than happy you did. It’s about flavor and this coleslaw brings it.

Carolina Coleslaw

This is my kind of coleslaw. The kind that makes me happy. A little sweetness. A little of that ‘pucker up’ vinegar hit. And my favorite, celery seed. Celery seed adds so much to a slaw or whatever you use it in. Carolina coleslaw is crunchy great. It holds up too, making it perfect for taking to a pitch-in or picnic. No worries about serving soggy slaw.

Carolina Coleslaw

Great By Itself, Great On Hot Dogs

Of course you can serve this Carolina coleslaw on the side of whatever you’re having. But don’t hesitate to go a little further. If you’re having hot dogs, heap this coleslaw on top of them. You don’t need any mustard. The slaw adds everything you need. Ditto if you’re having pulled pork sandwiches. The slaw adds a great contrasting crunch to that tender BBQ.

If you want a spicier version, seed a jalapeno, chop it, and add it to the coleslaw mix before incorporating the dressing.

Thick and Creamy Blue Cheese Salad Dressing

It’s ‘put-an-obscene-amount-of-dressing-on-your-salad’ day! I’m going to celebrate with this thick and creamy blue cheese salad dressing. I’ll try to control myself but I know I won’t. This dressing is right up my alley. The right consistency. The right blue cheese ‘funk’. Creamy. Oh yes, I’m going to use too much. I knew that when I made it. Sometimes you just gotta enjoy things!

Save The Light Stuff For Later

This thick and creamy blue cheese salad dressing isn’t light. It’s not lo-cal. It doesn’t even pretend to be. It’s supposed to be in-your-face bold and decadent. And it is. Hey, sometimes I want my dinner salad to be an event. Something memorable. And something that satisfies. Well this dressing is a great way to accomplish all of those things.

This stuff is great for dipping Buffalo wings. Big time great.

Tangy Coleslaw

This tangy coleslaw screams ‘fresh’. It’s full of all sorts of great fresh things. Corn. Bell pepper. Onion. Cabbage. The dressing is a slightly sweet, tangy mix that really accentuates the freshness in every bite. Best made with fresh corn, this slaw can be made with canned or frozen, too.

Tangy Coleslaw

Coleslaw with a Kick

This tangy coleslaw does contain a little bit of jalapeno. Not that much that you’ll find it hot. But, if that scares you, you can leave it out or substitute a poblano pepper instead. I found that the sweetness in the dressing tamed the jalapeno to the point where I didn’t find it to be spicy, just enjoyable/

If you decide to use canned corn, just drain well. For frozen, just thaw. You can roast them by spreading the kernels out onto a sheet pan and placing under the broiler, stirring often, until lightly charred.

Sesame Salad Dressing

My wife quickly declared this sesame salad dressing as one of her all-time favorite salad dressings. She loved the light hint of sesame oil and soy sauce, with just a touch of sweetness. A hint of vinegar. And creamy mayonnaise. They hit all the right notes for her. It’s not a thick sauce, not at all. It’s just slightly thicker than say, Italian dressing. And it’s perfect on a garden salad.

Sesame Salad Dressing

Don’t Rush

Although you can try and rush this sesame salad dressing, don’t. Resist the temptation to do that. Let it rest at least 30 minutes before serving. At least. And if you can, let it sit overnight so that the flavors get happier. As I note in the recipe, you might want to adjust the amount of sesame oil. Although my wife and I both are fans of sesame oil, we find that a little goes a long ways. We felt that one tablespoon was perfect for us. So, we recommend that you start with a little, taste, and add more if desired. You can always add more after it has set a while, too. You just can’t take it back out so use it sparingly if you’re like us and are a little sesame oil-shy.

Russian Salad Dressing

We both grew up with a different looking bottled Russian dressing. We made this recipe for Russian salad dressing and of course, it looked different. It tasted fantastic, like Thousand Island salad with the addition of chili sauce and some spices (and a bit of heat). That bottled stuff that’s red and looks more like French or Catalina dressing? Almost the same thing, but without the creamy mayonnaise.

Russian Salad Dressing

I Could Go For A Reuben Sandwich

This Russian salad dressing is fantastic on a fresh green salad. But oh, would it ever be amazing on a Reuben sandwich. Sure, you could go with the classic Thousand Island, but why not kick that sandwich up a bit and use this instead? And don’t be shy with it either!

Start Out with Less Onion

Depending on how you feel about onion flavor, I’d say start with a smaller shallot. Some shallots are hotter than others and if you go all-in with a bigger shallot it might overwhelm all of the other flavors in the dressing. So go easy with it at first. You can always add more.

When a recipe like this one calls for mayonnaise, there’s only one that I reach for. Yep, there’s a number of great mayonnaise brands out there. I’ve tried them all I think. But in the end, I go with Blue Plate mayonnaise each and every time.

Roasted Red Pepper Vinaigrette

One of my favorite things is roasted red peppers. I find myself using them in a lot of different recipes. I was happy to find this recipe for roasted red pepper vinaigrette. Of course, the roasted red pepper flavor is delicious. But the vinegar gives it a little bite. The honey balances it all out. Sometimes we will have salad week for dinner and we will change up the salads and make a couple of dressings for the week. This dressing has become one of our favorites!

Roasted Red Pepper Vinaigrette

Simple. Yet Delicious.

Roasted red pepper vinaigrette is easy to make and you probably have all of the ingredients in your pantry. I used jarred roasted red peppers instead of roasting my own, but either will work. The nice thing about the jarred ones is that if you end up with any leftovers they do freeze well for uses in recipes like this dressing.

We like this dressing to be smooth. But you can adjust the consistency a bit by not running the food processor as long. Or run it longer. You might want to check it after a few seconds to see if it’s where you want it to be.

Roasted Garlic Salad Dressing

Boy oh boy did I ever love this roasted garlic salad dressing! Great roasted garlic flavor tamed by Dijon and honey. And not overly mustardy, either. That’s a good thing. For me, there is such a thing as too much mustard. I can’t do that ‘mustard pucker face’. And it has the perfect consistency. Not too thick that you need to cut it with a knife. Not too runny so that it just runs right off your salad.

Roasted Garlic Salad Dressing

Make Extra For Marinating

This roasted garlic salad dressing is also outstanding as a poultry marinade, especially for chicken destined for the grill. It is packed with flavor. Just place the chicken into a resealable container. Add enough of the dressing to cover the meat. Turn the chicken once to make sure the dressing covers it well. Seal and refrigerate for 30 minutes or up to 2 hours. Before grilling or cooking shake off any excess marinade. Enjoy!

Roasted Garlic Dijon Salad Dressing

I would not call myself a mustard-aholic. It seems to depend on the day as to whether or not I’m all-in on a mustardy dressing or not. Fortunately, though, this roasted garlic Dijon salad dressing didn’t require that I be in the mood for mustard. It has just the right amount of mustard-ness. It’s slightly sweet with a hint of roasted garlic, one of my favorite flavors. And a little citrus to boot. It’s got everything, all in an easy-to-make dressing.

Roasted Garlic Dijon Salad Dressing

More Garlic is More Better

I’m quite the garlic fan, so I will double the amount in this recipe the next time I make it. I’m ok with it being up front in my roasted garlic Dijon salad dressing instead of just kind of hanging around with the other flavors.

No Need For Fancy Dijon

I used our local grocery store’s Dijon mustard. Nothing fancy. You can go fancy if you want, but I don’t think it’ll make a big difference as long as you’re using a mustard that you like to use in other recipes. It’s like cooking with wine. You don’t cook with a wine you don’t like. Don’t make a dressing with a mustard you don’t like either!
